Skinny Beef Stroganoff

Skinny Beef Stroganoff
Classic beef stroganoff is a Russian dish made from sautéed beef and a sauce made from sour cream. It’s popularity spread around the globe, spawning many variations. The traditional American version also has onions and mushrooms sautéed in butter, and is served over a bed of egg noodles. It’s a hearty meal that’s especially comforting during colder months. But it’s rich, and loaded with calories. This Skinny Beef Stroganoff has the same savory flavor, but significantly reduces the fat and calories.
To make this Skinny Beef Stroganoff dinner you’ll want to make again and again, start with extra lean sirloin beef, and add plenty of it. With so much hearty beef, you're able to reduce the amount of noodles and upgrade them to whole wheat egg noodles, while managing to make the dish more satisfying. To replicate the creamy sauce, combine beef stock with reduced fat Greek yogurt. The yogurt adds the similar tang of sour cream, without the fat. A sprinkling of fresh parsley adds a welcome pop of color, fresh fragrance, and elevates the dish.
Skinny Beef Stroganoff Recipe
Skinny Beef Stroganoff

Serves: 6 servings, approx. 1½ cups each
Ingredients
  • 3 tsp. olive oil, divided use
  • 1½ lbs. extra lean beef sirloin, cut into thin strips
  • 1 medium onion, chopped
  • 8 oz. sliced mushrooms
  • 3 Tbsp. whole wheat flour
  • 4 cups low sodium organic beef broth
  • ¾ tsp. sea salt (or Himalayan salt)
  • ½ tsp. ground black pepper
  • 3 oz. dry whole wheat egg noodles
  • ½ cup reduced fat (2%) plain Greek yogurt
  • 2 Tbsp. finely chopped parsley
Instructions
  1. Heat 1 tsp. oil in large nonstick skillet over high heat.
  2. Add beef; cook, stirring frequently, for 4 to 5 minutes, or until browned. Remove from skillet. Set aside.
  3. Heat 1 tsp. oil in same skillet over medium-high heat.
  4. Add onion; cook, stirring frequently, for 3 to 4 minutes.
  5. Add mushrooms; cook, stirring frequently, for 4 to 6 minutes, or until most liquid is absorbed.
  6. Add remaining 1 tsp. oil; cook, stirring occasionally, for 1 minute.
  7. Add flour; cook, stirring frequently, until onion mixture is evenly coated.
  8. Add broth slowly, stirring constantly. Season with salt and pepper. Bring to a boil. Reduce heat to medium-low; cook, stirring frequently, for 8 to 10 minutes.
  9. Add egg noodles. Mix well and cover with liquid; cover. Cook for 6 to 8 minutes, or until noodles are soft. Remove from heat.
  10. Add yogurt; mix well.
  11. Serve garnished with parsley.

30 Healthy Chicken Breast Recipes

I’m not a picky eater by any means, but there is something about white meat that was just…bland. These recipes, are part of the reason why my tune has changed. They're turning "tastes like chicken" into a good thing again.


Recently I’ve learned how versatile chicken breast can be. Roast it, grill it, sautée it, marinate it, serve it in soups, on salads, on pizza, with fruit, flavor it with herbs, spices, sauces. Chicken breast meat has about 9 grams of protein and only 1 gram of fat per ounce, making it one of the leanest proteins. And, there are so many ways to add flavor it.
When you cook with chicken, keep in mind that their breasts have been getting bigger. Individual boneless, skinless breasts used to weigh 5 or 6 ounces, but can now be a hefty 8 ounces or more. That extra meat comes with an additional 60 calories and 5 grams of fat. That’s not necessarily a lot, and it’s good lean protein, but it can add up fast when you’re watching your waistline. I like to separate the tenders from the breast meat and save them for another meal. If the portion is still too big, I save the extra cooked meat for a salad the next day. (Meal prep win!!)

Healthier Ranch Dressing

Ranch dressing can be loaded with fat and calories. Make your own much healthier version with this simple recipe has the classic flavor you’re looking for. It’s perfect for dipping or drizzling on salads or sandwiches.
Start by combining a variety of herbs and spices to make the Ranch Seasoning Blend. You only need a Tbsp. of the mixture per batch of ranch dressing. Store the rest in an airtight container for the next time you make dressing, or use it as a delicious spice rub for chicken or fish!
Note: Because the calories are so low in this Healthier Ranch Dressing, the serving size of 2 Tbsp. only counts as ½ an orange container in the Portion Fix. The dry Ranch Seasoning Blend is considered a free food.

Ranch Seasoning Blend
Ingredients:
2 Tbsp. dried parsley, crushed
2 tsp. dried onion flakes
2 tsp. onion powder
2 tsp. garlic powder
1½ tsp. dried dill
1½ tsp. dried cloves
1 tsp. sea salt
1 tsp. ground black pepper

Preparation:

Homemade Hummus

Homemade hummus is great because you can reduce the amount of olive oil and tahini, making it lower in fat and calories. Since this recipe has a lot less fat than store-bought hummus, we calculate the Portion Fix containers differently. A ¼ cup serving of this recipe uses only ½ of a precious yellow and 1½ tsp instead of 1 blue container (which means you can save that blue container for avocado, nuts, or cheese! YAY!!!).
Homemade Hummus
Total Time: 5 min.

Cooking Time: None
Yield: 10 servings, about ¼ cup each
Ingredients:
1 (15 oz.) can chickpeas (garbanzo beans), reserve liquid
¼ cup fresh lemon juice
1 Tbsp. extra-virgin olive oil
4 cloves garlic, coarsely chopped
¼ cup tahini (sesame butter)
Sea salt (or Himalayan salt) (to taste; optional)
Ground paprika (for garnish; optional)
Preparation:
1. Place chickpeas, lemon juice, oil, and garlic in food processor or blender and pulse until chickpeas are mashed.
2. Add tahini; pulse for 1 minute. If hummus is too thick, add some of the reserved chickpea liquid. Add salt, if desired.
3. Garnish with paprika, if desired.

Kale Chips

For a healthy, crunchy snack high in vitamin A, look no further! Kale chips are an easy way to get kids, and adults, to snack healthy.
Total Time: 28 min.
Prep Time: 10 min.
Cooking Time: 18 min.
Yield: 4 servings, 1 cup each
Ingredients:
1 bunch (about 6 oz.) kale leaves
1 Tbsp. olive oil
Preparation:
1. Preheat oven to 350° F.
2. Remove kale leaves from stems. Tear leaves into bite-sized pieces. Discard stems.
3. Wash and thoroughly dry kale with a salad spinner or paper towel.
4. Line large baking sheet with parchment paper, if desired.
5. Combine leaves and oil in medium bowl; toss gently to blend.
6. Add desired flavoring combinations; mix well.
7. Arrange kale on prepared baking sheet in a single layer.
8. Bake for 15 to 18 minutes, or until crisp.
9. Transfer onto a wire rack or paper towels; cool.
